Origin Story
Unified Ferments is a Brooklyn-based fermented tea brand. Unified Ferments launched in late 2019.[1] The company operates at the intersection of two culinary traditions: tea production and fermentation, both with lineages extending deep into prehistory. Nilgiri teas (both Coonoor and Green) are produced by an innovative, women-led team in southern India's Nilgiri mountains.
Key People
Unified Ferments was co-founded by Young Stowe and Graham Pirtle.[1]
Lineup
Unified Ferments produces non-alcoholic fermented beverages from single origin teas. Products are designed to sit comfortably in stemware, positioning them as fine beverage alternatives rather than typical kombucha.
Philosophy
Unified Ferments positions itself as third-wave kombucha, analogous to third-wave coffee.[1] Unified Ferments hosts an experiments page for trial-runs, one-offs, and experimental blends that have not yet made it into main production. The company operates at the intersection of two culinary traditions: tea production and fermentation, both with lineages extending deep into prehistory. Unified Ferments uses kombucha fermentation chemistry to unpack and translate tea into a novel context. The company prioritizes tea quality above all else in their production process. Tea is sourced from artisan producers who spend their working lives inflecting tea into different styles and expressions. The company was motivated by flavor rather than health claims, explicitly distancing from probiotic health marketing. Products are designed to sit comfortably in stemware, positioning them as fine beverage alternatives rather than typical kombucha. Unified Ferments uses the chemistry of kombucha fermentation to produce beverages that defy the term 'kombucha', positioning tea as the primary focus rather than the fermentation culture. The company describes their products as defying the typical kombucha category through advanced blending, aging, and clarity techniques. Nilgiri Coonoor and Nilgiri Green are made from the same harvest but processed in contrasting styles.
Techniques & Ingredients: What Makes Unified Ferments Unique
Unified Ferments brews each single-origin loose-leaf tea by hand, studying optimal steeping methods per tea variety.[1] Unified Ferments uses the chemistry of kombucha fermentation to produce beverages that defy the term 'kombucha', positioning tea as the primary focus rather than the fermentation culture. Kombucha is a beverage made from sweetened tea and a SCOBY (symbiotic colony of yeasts and bacteria) that work in tandem to create a tangy, complex beverage. Unified Ferments' products contain approximately 7.5 grams of sugar per 150mL serving, equating to roughly 30 calories per glass. Unified Ferments produces non-alcoholic fermented beverages from single origin teas. All products are sold in 750mL bottles. Base ingredients across all products are tea leaves, water, sweetener (honey or sugar), and aged matured kombucha as a starter culture. Fermentation uses a SCOBY (symbiotic colony of yeasts and bacteria) that creates a hostile environment for other microbial life. Production process includes blending, aging, and achieving clarity in the finished products. Nilgiri Coonoor and Nilgiri Green are made from the same harvest but processed in contrasting styles. Unified Ferments uses kombucha fermentation chemistry to unpack and translate tea into a novel context. The company describes their products as defying the typical kombucha category through advanced blending, aging, and clarity techniques. Tea polyphenols, catechins, tannins, caffeine, and subtle sugars are all utilized across the spectrum of the fermentation process. Unified Ferments imports snow chrysanthemums from northern China Kunlun Mountain range for one of their four core products.[1] The company prioritizes tea quality above all else in their production process. Tea is sourced from artisan producers who spend their working lives inflecting tea into different styles and expressions. Nilgiri teas (both Coonoor and Green) are produced by an innovative, women-led team in southern India's Nilgiri mountains.
