NON1 Salted Raspberry & Chamomile

by NON

Production Philosophy

NON1 Salted Raspberry & Chamomile is built around techniques that preserve fresh fruit character rather than cooking it down. NON freeze-dries (lyophilises) Tasmanian raspberries to preserve their shape, colour, flavour, and nutritional content, a process the producer states removes 85% of the water molecules from the fruit and concentrates its flavour. The raspberries are then cold-steeped to maintain a fresh flavour rather than a jam-like sweetness.[1],[2]

Composition & Vinification

The full declared ingredients list is: water, verjus, raspberries, sugar, chamomile, and salt.[1]

Tasmanian Raspberries — Fruit Core and Secondary Tannin. The raspberries are sourced from Tasmania and freeze-dried (lyophilisation) to preserve their shape, colour, flavour, and nutritional content, a step the producer states removes 85% of the fruit's water molecules and concentrates flavour. They are cold-steeped to maintain a fresh flavour rather than a jam-like sweetness. The raspberry skins provide a small additional amount of tannin.[3]

Chamomile — Tannin and Floral Finish. The chamomile is sourced from Egypt, which NON notes is one of the world's largest producers of Matricaria chamomilla. It is used for tannin and a creamy finish, contributing lingering tannins for a floral finish.[1],[4]

Verjus — Acidity. Acidity comes from verjus pressed from Semillon grapes sourced from the Barossa Valley, Australia.[1]

Murray River Salt — Salinity. Murray River salt provides salinity and creates a moreish sensation.[1]

Sugar — Balance. Sugar is used to balance the final product, with the amount adjusted depending on the natural sweetness of the raspberries.[1]

Tasting Profile

Palate. NON describes the profile as balanced, sweet, and salty, with chamomile providing lingering tannins for a floral finish.[1]

Structure. [1]

Pairings

NON pairs NON1 Salted Raspberry & Chamomile with Chef Pamella Tomio's Chargrilled Broccoli in Salsa Romesco & Seaweed Almonds, and with Quick Pickled Strawberries with Creamed Mousse & Dark Chocolate, a recipe by Cecile Vadas. The producer also names a tomato and burrata dish featuring chamomile-infused vinegar.[5]

More generally, the producer suggests pairing with citrus-forward salads, creamy desserts, and cured meats.[1]
