Ambijus is a Norwegian producer operating under the company name Nolo Nordic AS, headquartered just outside of Oslo in Sollihøgda. According to the producer, the company was created to provide non-alcoholic beverages that rival wine in depth and experience, drawing inspiration from Nordic nature and developed through experimentation, research, and engagement with Nordic chefs and sommeliers. Its beverages are crafted from ingredients native to Norway. Ambijus credits its first experiment to the fermentation of spruce needles.[1],[2]
People & Founders
Ambijus was founded by Christian Stray-Jansen and Alexander Jansen, both co-founders of the company Nolo Nordic AS. The producer states that Christian Stray-Jansen chose to eliminate alcohol from his life, a decision that motivated the creation of Ambijus.

What They Make
Ambijus's lineup consists of three drinks: Act Naturally, Real Fantasy, and Clearly Confused. Each is framed around a Norwegian landscape — Act Naturally is inspired by the Norwegian coastline, Clearly Confused by the Norwegian forest, and Real Fantasy by the Norwegian mountains. All three are less than 0.5% ABV and are therefore classified as alcohol-free.[2]
Techniques & Ingredients
Ambijus builds its drinks from ingredients native to Norway, produced using techniques that include fermentation, infusions, cold brewing, and distillation, with foraging and fermentation methods drawn from modern Scandinavian cuisine. Each of the three bottlings layers foraged and cultivated components with fermented tea, oak, and botanical elements to construct wine-adjacent structure.[2]
Tea fermentation. Fermented tea forms the base of two of the three drinks, contributing acidity and body. Ambijus credits its very first experiment to the fermentation of spruce needles.
- Act Naturally — built on fermented tea alongside sea buckthorn, gooseberry, elderflower, and apples.
- Real Fantasy — built on fermented tea alongside elderberry, blueberry, and lingonberry.
Oak character. Oak recurs across the range as a source of tannin and structure. Clearly Confused is made with oak, and Real Fantasy uses toasted oak, contributing an oaked character in both.

Berry & fruit bases. Fruit and berry components anchor each drink.

Foraged botanicals. Foraged and forest botanicals give the range its Scandinavian signature.

Production standards. All Ambijus bottles are pasteurized, which the producer states makes them safe for pregnant individuals. All drinks are vegan and gluten-free.
Taste & Serving
Across the range, Ambijus drinks share a fruity, tangy profile with the acidity, tannin, and structure the producer designs for food pairing.[2]
Act Naturally. Fruity, tangy, and slightly tropical with a touch of sea salt on the finish, combining bright acidity with mineral notes. OSLOSLO's Victor Ramn describes it as having good structure, a vinous and grape-forward character, and being fresh and still. It pairs well with seafood, chicken, vegetables, herb-based sauces such as pesto, chimichurri, and mojo, as well as cheese and salty snacks; OSLOSLO also pairs it with tomato and blue cheese in combination.
Clearly Confused. Fruity, tangy, and herbal with a touch of spruce on the finish, and described as having an oaked character with subtle fruitiness, deep earthy aromas, and depth and body. Kolonihagen Frogner's sommelier describes it as having a sharp acidity that brings perfect balance. It pairs well with cured meats, game, mushrooms, roasted vegetables, creamy soups, cheeses, and salty snacks, and is paired with a smoked and salt-baked beet tartare with feta-style cheese, horseradish, and sage, its balance of sweetness and acidity complementing the dish.
Real Fantasy. Fruity, tangy, and spicy with a touch of lingonberry and oak on the finish, presenting a full, rounded style with ripe fruitiness and a gentle bitterness, opening with gentle sweetness and closing with a palate-cleansing freshness. It is noted for its tannins, warmth of pepper, and fullness. It pairs well with beef, stews, cured meats, pasta and pizza with red sauce, cheese, chocolate, and snacks, and is paired with a duck pie served with a rum and rhubarb jus, oyster mushrooms, and chanterelles, its ripe fruitiness and gentle bitterness mirroring the rum warmth, rhubarb tartness, and mushroom umami.
