IRIKA Ruby tea leaves are cultivated using the arc-training (弧状仕立) growing method.[1] IRIKA Ruby tea leaves are hand-picked one bud at a time during the first to second flush season (May to July).[1] IRIKA Ruby is produced using a pan-firing (釜炒り/手炒り) technique to stop fermentation, following slow withering, hand-rolling, machine rolling, and natural fermentation.[1] IRIKA Ruby undergoes a non-heated cold extraction process lasting 3 days.[1]
