Méthode Ancestrale in the Bottle. Pétillant Naturel Tea Sencha is a fermented, bottle-aged tea, unpasteurized and unfiltered. It sits within the Konanna 'Tea' series, the producer's line of low-alcohol drinks positioned as alternatives to wine or champagne. Konanna, founded in 2024 by Konstantin Stefanik and Anna Holzer, ferments and ages its Pétillant Naturel Teas directly in the bottle using the traditional Méthode Ancestrale. Across its range the company describes a practice of minimal intervention, organic ingredients, and trust in fermentation, made without blending or flavour design. The drink takes its name from sencha tea, its key ingredient.[1],[2]

Composition & Vinification

Declared ingredients: water, sugar, sencha green tea, and a symbiotic colony of bacteria and yeast. The sugar and the sencha green tea are certified organic.[3]

Sencha Green Tea — Aromatic Base. The drink is built on premium green tea. Konanna states it combines floral, citrus, and subtle umami notes drawn from the sencha base.[3]

Sugar — Fermentation Substrate. Certified organic sugar provides the substrate consumed during fermentation.[3]

Symbiotic Colony of Bacteria and Yeast — Fermentation Culture. A symbiotic colony of bacteria and yeast drives the fermentation of the sweetened tea base.[3]

Fermentation Methodology

Pétillant Naturel Tea Sencha is fermented and aged directly in the bottle using the traditional Méthode Ancestrale, a process Konanna applies across its Tea line. Fermentation is carried out by the symbiotic colony of bacteria and yeast. The finished drink is left unfiltered and unpasteurized.[1]
