A Lavender-Infused Kombucha. Hidcote Blue is a kombucha produced by København Kombucha, founded by Louise Benkjær Limbach. It is infused with Hidcote Blue lavender, which the producer describes as the dominant lavender flower growing in the Nordics. Hidcote Blue is made with water, kombucha culture, sugar, tea, lavender, and CO2, all from certified organic production.[1]

Tasting Profile

Hidcote Blue pairs well with umami-rich and smoky dishes featuring tomatoes, eggplant, pork, and poultry, and connects especially well with miso glaze. It also works as an apéritif.[1]
